Do you love the smell of fresh lemons? I sure do! I personally, am typically a chocolate lover. However, I have discovered that lemon cookies are super AMAZING! Several years ago, I was experimenting with substitutions while baking and I decided to try to make Lemon Cookies! This recipe turned out so yummy that I thought I would share it with you!

Throughout time, I have learned that you can truly substitute pretty much any ingredient that you want or need to. Substitutions are super easy. If you are wanting to eat healthier, but still love to bake, then I suggest making simple changes in your baking. For example: Instead of using sugar, substitute it with Agave. Sugar can be detrimental to anyone who is diabetic or has sensitivities. Agave tastes super sweet but it is very low on the glycemic index. This makes for a great substitution.

Another one that is easy to substitute is milk. If you cannot eat dairy, then substitute milk with what ever you CAN have. For example, you could use coconut milk, oat milk, or almond milk instead. Below, I will show you how to make Lemon Cookies along with using healthy substitutions.

Lemon Cookies

Lemon Cookies

1 1/4 cup Sugar

1 – 2 Tablespoons of Fresh Lemon Juice

2 teaspoons Baking Powder

Himalayan Pink Salt or Celtic Sea Salt

3/4 cup Butter = thin spread out cookie

2 Eggs

2 Tbsp Milk

2 cups Flour

First, Combine all ingredients except for the flour in a mixing bowl.  Next, mix the batter really well.  Then, add flour and mix it well.  After that, spray your cookie sheet with Avocado Oil Spray.  Then, drop spoonfuls of cookie dough on your cookie sheet. Finally, bake the cookies at 350 degrees for 10-12 minutes.  *Prior to baking, you can refrigerate the dough for 2 hours and then roll the balls in powdered sugar.

2 Tbsp Silk Coconut Milk, Almond Milk Oat Milk

2 cups Flour

First, Combine all ingredients except for the flour in a mixing bowl.  Next, mix the batter really well.  Then, add flour and mix it well.  After that, spray your cookie sheet with Avocado Oil Spray.  Then, drop spoonfuls of cookie dough on your cookie sheet. Finally, bake the cookies at 350 degrees for 10-12 minutes.  *Prior to baking, you can refrigerate the dough for 2 hours and then roll the balls in powdered sugar.
