Sometimes I get so busy that I end up skipping lunch. Do you ever do that? It’s not ideal, or healthy, but it happens. So instead of skipping lunch, take a few minutes to make something that is good. Here’s a simple healthy lunch that only takes about 5 minutes to cook! Not only is it quick to make, but it’s also HEALTHY as well! Super high in protein and low in carbs.

This healthy meal only has 1 carb (15 grams), but is packed with 5 proteins (36 grams)!! The spinach adds extra nutrients also. You can change this up however you want. It’s SUPER easy! In addition to this, it would keep well in a lunch box. In order to stay healthy, it is important to plan ahead a little bit and prepare foods that provide the nutrients that we need.

If you want some variations, you can add onions, garlic, green onions, bell peppers or any veggies that sound good to you. You can also add YL Vitality Essential oils. Spinach Hashbrowns

3/4 cup potato hash browns (from a bag)

4 whole eggs

1/2 cup spinach

1 ounce shredded cheese

A Pinch of Celtic Sea Salt or Himalayan Pink Salt

A Pinch of ground black pepper

First, heat up 2 tablespoons of real butter (healthy fat) in a medium skillet. Next, brown the hashbrowns until they are half way cooked. Then, make 4 holes in the hashbrowns. After that, crack open an egg right into each hole. Let it cook for 1 minute and then sprinkle it with salt and pepper. Finally, add spinach and cheese and mix it well.

**Side note: if you add other veggies, make sure you add them when you are browning the hashbrowns. This way, they will be cooked well. The spinach is added later because you don’t want it to overcook it or else it will become mushy.
